
A LETTER FROM LINDA TO NATURAL FOOD COOKS EVERYWHERE:
I was a young yoga instructor, and a vegetarian, back when we started Nature’s Nook.
It took a lot of work to start a vegetarian restaurant back then. This was a time when the concepts of yoga and vegetarianism were definitely not part of mainstream culture in Boardman, Ohio, where I lived. But I was very lucky to find a small group of people committed to yoga, and to whole foods, and eventually was able to start Nature’s Nook Restaurant and Yoga Center. From the beginning we attracted a special group of wonderful, like-minded people who became our loyal customers and our friends.
My days back then were filled with yoga classes, meditation, yoga study, hosting talks and visits from various spiritual teachers, travel to far away ashrams, and cooking; lots and lots of cooking.
This is where the Nature’s Nook Cookbook was born. It contains all of our best recipes from the restaurant, along with a big serving of our philosophy of a healthy life. It has been out of print for many years, but the recipes have stood the test of time. I am publishing this new edition just as we cooked from it in the kitchen at Nature’s Nook, without updating anything. My hope is that you will find it useful, and that it will continue to spread among groups of like-minded people who are committed to understanding and living in harmony with Mother Earth.
I want you to know I will donate a part of the profits from the sale of this cookbook to groups working for the better treatment of animals, and to groups working against global warming.
